From Wild Caviar to Farmed Caviar

Sturgeon are among the oldest living species on Earth, having existed for more than 200 million years. For centuries, caviar was harvested exclusively from wild sturgeon, primarily from the Caspian Sea. However, overfishing and habitat loss caused populations to collapse. In 1998, sturgeon were placed under CITES protection. Since then, all legally traded caviar comes from farmed sturgeon, raised in controlled environments to ensure the future of the species.
